Pawsome Beef and Quinoa Stew

This recipe brings together protein rich beef, fiber filled quinoa, and various nutritionally-dense vegetables to make a hearty stew perfect for any occasion.
You’ll need:
- 2 tsp olive or sunflower oil
- 1 pound lean ground beef
- 1 cup chopped zucchini
- 1 cup chopped carrot
- 1 cup diced tomatoes
- ½ cup shiitake mushrooms
- 14 ounces low-sodium beef broth *broth should not have garlic or onion
- ½ cup water
- ½ cup uncooked quinoa
In a saucepan, heat the oil over medium-high heat. Add your beef and cook until it is lightly browned. This should take about 5-6 minutes.
Stir in your broth, tomatoes, and water and heat until boiling. Once boiling, reduce heat to low and simmer for 45 minutes.
Add in your carrot, zucchini, mushrooms and uncooked quinoa and cook for another 25 minutes. Once the beef is tender, you will know it is done!
Let cool and serve in your finest doggy bowl. For the humans, salt, pepper, and other seasonings may be added to preference, but leave these ingredients out of your pup’s serving.
